Our founder

Now, let's introduce you to our founder, Katherine Marks. She's not your typical pastry chef and business owner. Having tired of corporate bad behaviour, Katherine followed her passion for pastries and, more importantly, her desire for a kind and respectful workplace. At middle age, she fearlessly reinvented herself, trading her corporate wardrobe for a chef's uniform. And you know what? She's living proof that you're never too old to follow your dreams.

Although Katherine has discarded her former corporate wardrobe, her trademark red lipstick remains.

Our team

Our bakery team is headed up by Kane Neale – former Executive Pastry Chef for Shannon Bennett's Vue Group, Mork Chocolate and Weirdoughs. Our regulars know Kane – he's the 'guy with the beard'. But he's a tad camera-shy, so you'll have to pop into the shop to catch a glimpse of him.

Also bringing patisserie mastery to Coco's is Senior Pastry Chef Tootie Perez, who trained for many years at Bangkok's renowned Scene Patisserie under Asian baking icon Paulo Bairan. Tootie is our lamination expert and ensures our pastry is light, flaky and perfectly layered.
